    September 24, 2018 - Pausing for the Cause (S.K.Y. Restaurant - Chicago IL): Small glass from magnum, brief note. Wow, what a surprise, nobody would have ever guessed 50+ yo. Apple, apple pie and some caramel apple. Still nicely fresh with enough brightness to be very interesting, even if just moderately complex.

    September 24, 2018 - From 1.5L. This was just shockingly fresh when opened. Almost heady with effervescence and more mineral-forward than fruity, with some Caribbean spice notes. It changed quickly with time open (which I suppose isn't surprising for a recent disgorgement of this age), picking up a more musky quality that's indicative of some age. Fun to try.

    September 24, 2018 - Pausing for the Cause 2018 (S.K.Y Restaurant): From magnum. Never would have guessed the age. Pale straw colors and plenty of effervescence and wound up backbone. Slight funk on the lingering finish, but man this is a fun one.

    September 29, 2017 - Dinner at HaiSous (Chicago, IL): From magnum. No question about it, if this were served blind to me, I would have at best put this in the late 80s. This is ridiculously fresh, with a brilliant nose of brioche, citrus, and just a bit of roasted nuts (the only real indication of its age). The amount of bead on this is insane -- this is fresher and crisper than so many younger Champagnes I've had -- this just puts them to shame. The palate isn't the densest and most potent, but it has a lovely gentle refinement and dignity about it. This is at an amazing spot right now, and well-stored bottles are in no danger of decline.
