    January 26, 2021 - Beim Öffnen eine eigenartig süßlich sprudelnde Kräutersuppe, ohje, ohje, wär fast Opfer des Ausgusses geworden. Einen, noch besser zwei Tage später war das plötzlich ein durchaus balancierter, angenehmer, spritziger Crémant. So kann einen ein vorschnelles Urteil in die Irre führen.

    January 2, 2016 - From memory. Had this with Tara and Lawrence. Pale yellow color with yeasty brioche, gala apple aromas. Palate had really nice weight with fine persistent bubbles, apple, some mild citrus, herbs, and really nice minerals. Beautiful balanced acids. Nicely done. A steal from Fass Selections. May have to be a house sparkler.

    May 26, 2015 - Popped and poured. Nuanced aromas of pear, kumquat and a whiff of yeast. Slightly grassy flavors of white fruit. Bread and strawberries in the finish. Delicate, delicious, good backbone, depth, some complexity.

    Unlike some sparkling wines, it doesn't have the punching power to stand up against really assertive foods. That's not a flaw, just an observation. With that caveat, a perfect accompaniment to a wide variety of dishes, and an exceptional value.
