June 12, 2017 - Bubbly at Green Street Smoked Meats (Chicago, IL): Disgorged May 11, 2015, 3 g/L of dosage. The effervescence here is pretty potent; maybe a little bit too exuberant. Coarse bead, with tons of chalkiness and a nice touch of sweet white fruit. This time around, I felt the wine was almost a bit too bracing and acidic. When I revisited this, it didn't seem like it fleshed out too much.
