    January 13, 2022 - Really starting to finally mature. Color has changed to a nice carmel. Notes of Peach and Pinapple. Still nce and soft. Plenty of years ahead of it.

    December 30, 2021 - From 375: I'm afraid I like my Sauterne young. Brown sugar and citrus notes on the palate. Could use more acidity.Browning color indicates aging. Nice wine but not worth the price. Six of us could not finish the bottle. '09 Latour Blanche blows this away.

    December 25, 2021 - This extraordinarily sweet on first tasting. Candied pineapple and deep viscosity. Warm yellow in the glass. I struggled to drink more than about half a glass. Might go better with salty cheese.

    I stoppered the bottle and will revisit over the next days to see if it mellows.

    December 21, 2021 - Very good but not impressive as suggested by other comments here. Creamy, dense, flowers, passion fruit, mango, tropical mix, candied oranges, peppermint.

    December 19, 2021 - Opened an hour before dessert. Honey colored in the glass with heavy legs. I got stone fruit honey and caramel on the nose and more of the same on the palate, with some medjool date. Long finish. Alcohol 13% covered. The dessert (lemon cake) stifled any citrus in the Guiraud, probably any tropical fruit as well. I found the acid/sweetness balance just right but what do I know? First bottle from a half case I got at Acker auction for $150.
    Retasted the next day straight from the fridge I got some pineapple, mango and (on the other side) petrol. I have a feeling this wine is a chameleon. Must try it with stinky cheese.

    December 10, 2021 - Pnp.. 375. Really nice. Best bottle yet. Light in weight. Melon, cantelope and honeydew. Nice acidity. It's in a great place, at least in a half bottle.

    November 22, 2021 - Eight years later, this Sauternes has become richer, more intense and delicious. The color has evolved from a dark yellow to a deep orange. The honey notes are candied with age and there are more distinct tropical flavors of pineapple, apricot and mango. More secondary notes of butterscotch, caramel and ginger on the finish.

First glass was especially good: orange peel, honey, high acid, light. Second glass had a touch of bitterness. Not offensive, but less pleasant.
