    April 21, 2016 - Seattle. April, cloudy and cool. My wife Kathy was perusing old Bon App├ętit magazines when she happened upon a risotto recipe with kale and walnuts. It caught her attention. She caught my attention. As a bonus we had kale in the garden that was almost two feet high. A dinner plan came together: I was in charge of the wine. I carefully read and reread the risotto recipe. In addition to the arborio rice and kale, it called for roasted walnuts, onions, parmigiana, white wine, olive oil, salt and pepper. I surfed the Internet for a bit and it seemed like a slightly oaked Chardonnay with some legs would likely be a good match. I picked the 2014 Talley Vineyards Edna Valley Chardonnay because it had an appropriate amount of oak, an acidic zing, and that Edna Valley perfume thing. As a bonus, the 13.5% alcohol would help with the heavy aspects of risotto, or at least that's how I planned it.

    I served the wine only slightly chilled. I swished. I swirled. This is not a simple wine but it certainly is a delightful one. The pairing worked well. This Edna Valley Chardonnay is crisp with a tart green apple finish. No hints of pepper and spice, but by my third glass, and with my eyes closed this wine made me think of fresh celery and lemon zest. Lovely.
