Pale gold, fine persistent bubbles. Brioche on the nose with citrus and pear, light floral note. Very round and rich on the palate - balanced acidity. A beautiful champagne!
Notes from producer:
A blend of all of their Premier Cru terroirs: Chigny-les-Roses, Rilly-la-Montagne, Ludes
60% Pinot Meunier, 20% Chardonnay, 20% Pinot Noir
Dosage 8g/L
Vintified in stainless steel and enamelled steel vats,
10% oak barrels from Chigny-les-Roses

August 19, 2019 - Tasted at Flora Street Cafe in Dallas, TX as part of a wine dinner paired by Stephan Pyles (James Beard award winner).
Exceptionally paired with a tandoori fish dish that brought notes of plum, lavendar, stone fruit (think peach cobbler), and aromas of same. Rounded mouthfeel. Characteristic of its majority of Pinot Meunier (65%) in the blend.
A level of freshness and bubbles on par with the best.
