September 25, 2021 - A fairly even split of Cab Sauv, Merlot, and Sangiovese. Granite in colour with aromas of dark berries, ripe plums, spices, herbs, and an earthiness. Maybe some yeast aromas as well (like yeast in warm water).
Flavours follow. There is some licorice, bitterness and a touch of tartness overall as well. Time in air accentuates the bitterness and eliminates that tartness. Nice balance overall, good acidity, fruitiness is waning. Chalky drying tannins. -
