    July 17, 2022 - No notes taken. I‘ve had this before and same as this bottle it showed complex, intense, well-defined with a beautiful saffron boitrytis core. Depending on the bottle it had the acid backbone to keep it light and airy or it showed a bit flabby. Luckily, this bottle was on the right side of things and hence, this was a great wine, very harmonious and complete from start to finish. Nairac really excelled in 2005.

    Decanting: 1h in the decanter should be sufficient.

    March 20, 2022 - No notes taken. This is certainly one of the stars of the 2005 Sauternes. While the nose doesn’t show much expression (not on day 1, not on day 2), the palate has layers and layers of fine, pure saffron aromas, pears, apricots, quince, citrus and lots of spices. The complexity and precision are exceptional. The wine is quite full-bodied but has a high, round acidity which keeps it fresh and the sugar in check. It doesn’t have the lift and weightlessness the best Sauternes (Yquem) can have and should be consumed a touch more chilled than your average Sauternes but it has nevertheless a very good balance. 94 pts in my book (a bottle a few months back was even worth 96 pts thanks to a touch more lift).

    December 20, 2021 - Second time in 3 months tasting this beauty (no note last time). This is just an amazing wine with everything a great Sauternes needs: Good intensity, complex aroma profile, not too much ripeness, not too much sweetness, a clean botrytis aromas, nice balance and high and well-integrated acidity. This is already drinking quite well today but will certainly only get better with more age and complexity.

    TN: Not super expressive nose at first but slightly better with time. On the palate, however, the wine explodes with loads of saffron and spices, peach, quince, citrus and lime, a layer of minerality. Beautifully complex, super precise, superb freshness, long finish, this has it all.

    Decanting: Not decanted, no decanting necessary.

    December 4, 2021 - Tasted blind. The nose was not overly expressive, but showed really nice accents of spice, at the edges also saffron, candid apricot, white peach and fresh grassy notes. On the palate great creaminess with sufficient freshness to keep the balance, although a bit more wouldn‘t have been wrong.
