October 15, 2023 - This one I really love. Vinous, red fruited, oxidative but really good lift to the fruits, fresh and bright. Think plums, spiced pear, caramel, lemon tart, bruised apples, the bubbles are fine and uplifting, and the body is dense and voluminous. August 12, 2023 - Cult Grower Champagne (Shinzo Sushi): Disgorged May 2017, 0g/l. Slightly muted when first poured and slowly revealing the high tone red fruits aromas associated with Savart's champagne. Bruised red apple, strawberry, savoury no the palate with depth, lush, full of flavours, rich, notes of orange peel. Long finish. Drinking nicely now but could age a little longer to develop more complexity
June 14, 2023 - This bottle was disgorged in November 2016, quite well-aged Savart—a hint of coconut aroma, honey, and thick buttery velvety juice. Patently pronounced old champagne nose and palate. Alas! When I enjoyed sipping the nectar, I choked for more than a few minutes, which terrified me.
March 26, 2023 - Opened yesterday, finishing tonight. 100% Pinot Noir, no dose. Yesterday I sensed the wood on the wine, which as I look back at my other notes on this same disgorgement (January 2017), I made mention of it. 5-spice in one, graham cracker in another. This one aromatically shows the 5-spice character, along with a coconut. I don't mind it here but it does play a role in the overall picture. In terms of the palate, a concentrated lime, tangerine and tangy cherry are the key drivers. As to the acidity, and some other tasters have indicated things that suggest high or intense acidity, I don't find it to that level, but rather the right amount of acid to complement the fruit and power. I do really like acidity in my wine so it comes down to palate preference, and how that impacts tasting notes. And with a decade since harvest, this wine still seems young to me, both in the intensity it shows, the wood it retains and its power. If you have 2 or more, try one now and see what you think. It might help you calibrate the aging curve you want. I bet this goes a long time, maybe a good one for the aged Champagne crowd.
November 19, 2022 - Neighbourhood meet-up at Maison Dakota. Tasted blind. Drank in Gabriel Standart.
Appearance is clear, pale intensity, gold colour. Thin legs. Fine bubbles.
Nose medium intensity, with aromas of citrus tangerine orange, orange peel, oxidative notes, hay, chalky stony minerality. Developing.
On the palate, bone-dry, lovely cutting high acidity, medium- alcohol (12.5%), medium body. Medium+ flavour intensity, with flavours of juicy citrus lemon-lime, orange juice, tangerine peel, oxidative elemetns, chalky stones minerality, golden peaches and pineapple with more air as it warms up. Long finish.
Very good quality. Getting there, but still not achieved its full glory yet.
November 20, 2021 - Concentrated and rich. Great length. Need time in glass, keep in cellar for 3-5 years before it reaches its peak. Very good wine.
May 24, 2021 - on a whole other level, was very open after 30min open in bottle. Aromatically very complex. As close as it gets to a blanc de blanc
August 6, 2020 - Super complex, intense and lifted aromatics, so much going on here. Also a very strong Savart producer signature - slightly oxidative, sesame, ripe apple, malted barley notes. Very fine bubbles with a strikingly layered, concentrated palate. This is a lean and tightly wound wine with cutting acidity, but it's impressively concentrated. It's very strict and linear, and ultimately for me more impressive than delicious at present. I'd wager this is one of those Champagnes that will end up tasting better as a still wine after it's been left out all night. Hold, needs time.
August 3, 2020 - Fucking incredible Champagne. Needs some decanting beforehand to soften the initial tartness. Combines oxidative and fresh fruit aromas with a ton of secondary notes. Superb complexity right away. Structure lightweight, but far from anemic. This has some incredible drive and focus, with a long-lasting finish. I can just imagine how beautifully this will age. Wow!
