  January 14, 2022 - Opened an hour then decanted 3 more hours. The tannin finish of dryness was still there but vanish whilst in the glass . Thus wine is spectacular ! Balanced with structure and complexity . I believe this can still age up to a decade

  November 14, 2021 - Such an evening! Dinner at our vacation rental in Paso prepared by Chef Jeffery Scott's team at the house!! Fabulous meal - fabulous wine! We got quintessential Napa cabernet notes of well worn saddle leather, deep and luscious purple fruits, a dusting of dark chocolate, and a good dose of rich cigar tobacco. Pretty darn hedonistic! It most certainly has the structure to go another 8-10 years. A great value for what I paid for it!
  
  If you are planning a stay in Paso Robles with a group of 10 to 12 people, we highly recommend:
  1) "Graceful Oaks" offered thru Paso Robles Vacation Rentals.
  2) Chef Jeffery Scott and his Vineyard Events team.
  
  The combination of these two was fabulously memorable!!

  June 29, 2020 - Phenomenal Spring Mountain Cabernet...bold, dark fruit, some bite/grip from the tannin structure that eased the longer the wine was open. Decanted 1.5 hours before consuming, then continued to evolve over 3.5 hours. An interesting streak of mineralogy in the wine, adding to it’s complexity. Drank even better on Night 2 after returned the unconsumed wine back to the bottle over night. No hurry to drink given the tannic structure and how well it help up to the long decant.
