September 25, 2020 - Deep gold, big bubbles, rich, buttery, oxidative and somehow a bit shallow - disappointing

January 10, 2020 - (Disgorged in spring of 2009, 60% Pinot Noir and 40% Chardonnay)
Maturing nose showing lovage, nougat, tutti frutti and vanilla bourbon in a delicious way. Smooth red apples acidity on the palate, tutti frutti coming back on the mid before a nice and lengthy finish showing ginger and vanilla fudge. This has transformed and opened up a lot compared to my last bottle from last year, but should keep evolving very well for another decade or so.

    December 1, 2019 - Tasted blind.
Much fresher that a bottle tasted in 2015. Style reminded me a bit of the Jacquesson Champ Cain tasted just before this, but with an added touch of tropical fruit. Not my prefered style of champagne. Had a slightly worrisome note of evolution - I would be careful of saving these much longer (5+ years) if I had any.

August 8, 2019 - Round soft, long, smooth, with a wee bit of coffee notes – a real charmer; entering maturity, but there is a lot of spark left here; real personality and precision here.

July 26, 2019 - (Disgorged in spring of 2009, 60% Pinot Noir and 40% Chardonnay)
Lovely yellow colour with a fine stream of bubbles lead way for the lovely nose showing butterscotch, cream and hazelnuts in a very pleasant way. Still with a refreshingly sharp lemon acidity at first on the palate, combined with a smoother creaminess on the mid that balances each other perfectly andthen in the finish there’s a fresh lemon bittersweetness to close it all! Still very youthful and fresh, feels as it has much more to give over the coming decade..

(Billecart-Salmon Cuvée Nicolas François Billecart) A lovely character here, mealy and honeyed, a touch oaty, and overall a very enticing style. Great freshness on the palate, lovely sharp and vigorous mousse, with a very good depth of flavour, and a herby and lemony character. Very well defined, nicely developed since last year, and really fine potential. Good style.

(Billecart-Salmon Cuvée Nicolas François Billecart) This wine was served incredibly cold, and I had to warm it in my hand before judging. This has a subtly oaky nose still. It is rather characterful, but not overtly obvious. It has a fine palate, a deep presence of fruit, is full and is nicely composed. There is firmness and even a little grip. A little vinosity too, even a honeyed note. Finishes very well. Excellent potential.
