February 26, 2023 - Basically drinks like liquid rock. On day one it’s textbook cold-vintage Chablis with chalk on chalk, beautiful but unyielding. I dig it, and will take this over overt reduction or oxidation any day, but it’s not for everyone. On day two there’s some honeydew, apricot, lemon and white flowers breaking through. Stunning, very complete, loads of acid, this is my plutonic ideal of Chablis. I’ve been hating on Chardonnay lately but this is 😚🤌🏽🫡🤙🏽🤤

February 11, 2023 - Now this is top level Chablis that tastes just that! This is shellfish/chalky stone minerality in the forefront, even as the relatively generous fruit makes its presence known, with lemon, peach, apple and white flowers, the minerality remains up front. Delicious. My only 2014 Vaillons but opened at the right point in time.
