    January 8, 2017 - A remarkable wild fermented chardonnay from an up-and-coming producer and region. Though the nose was initially muted - I picked up primarily lemon, toast and a bit of straw - the palate opened and developed beautifully over the course of tasting. Aside from more lemon (a bit of salty preserved lemon, even), it has a strong, slate mineral core accompanied by sweet herbs and a bit of the toast influence of the oak. Very well balanced - acidity is present but not overpowering. Definitely worth seeking out.
