  April 6, 2024 - Lovely nose of strawberry ice cream, sea salt but not much else. On the palate this wasn’t my favorite. For me needed another gram or two dosage. Fun to try but prefer others.

  March 19, 2024 - Sushi and Champagne at Billy's (Billy Sushi, Mpls, MN): Light pink color. Drank a glass over 30 minutes. Herbal, chalk, apple peel, green strawberry, citrus, liqueur.

  pale salmon colour. subtle nose of strawberries, rose petals and baguette. full and complex in the mouth, with tart berry and bruised apple flavours laced with yeasty and citric accents and a flash of a bitter note. very long finish with a saline streak.
  
  complex and gastronomic rosé champagne that should age beautifully for a decade or so.
  
  12.5% AbV; zero dosage; 64% Chardonnay/ 36% Pinot Noir (vinified white) from Bouzy Grand Cru vineyards; colour comes from 5% Les Terres Roses Pinot Noir.

  February 10, 2024 - 100% Grand Cru from Bouzy. 64% Chardonnay & 36% Pinot Noir. No dosage.
  
  Definitely the most complex in the tasting so far. Fruits are nicely subtle. Strawberries, cherries, some blackberries, white citrus mix, pink grapefruit & white citrus with a touch of peach. Very soft, chalky powder, same for the limestone & volcanics, touch of white spice, undertones of saline & sea fossils, yeasty, brioche, pink roses and spring flowers, a very nicely woven structure w/ a softly & smartly polished finish.

  February 9, 2024 - Really nice sparkler. Beautiful light orangish pink, almost pastel like color. Fine, small bubbles added to the acidity.
  
  I got all strawberry/red fruits on the palate, as well as a very slight bit of the ginger/spice notes that others mention (just on the finish). Delicious.
