    October 30, 2023 - This is past peak no doubt, but wow you can taste the echoes of greatness. Acidity is mostly gone but there is still a hint of freshness that you feel from younger acidic Chablis. Subtle green apple and dried apricot. Faint lemon zest, almost like dried. A bit of caramel, honey. Strangely, the faint lemon and honey combined creates a barley tea kind of aroma, mouthfeel, and aftertaste. Quite delicious, even past peak. If consumed at it’s peak, I feel this could easily be 95.

    March 2, 2023 - Past its prime. Darkening gold color. Nose is a tad flat with lemon and suggestions of wood but not the flintiness I expect in good Chablis. The acidity if fully resolved. Finish is moderate. Drink up!

    October 14, 2022 - A gorgeous slightly darker but not too dark golden color. A nose of ripe stonefruits with a hint of mango and apricot, I am guessing can age further but it is quite evolved to me at this stage. There is still a barely noticeable bead of salinity but the acidity is significantly lower which was a surprise to me, but not too surprising as terroir vintage and producer for the same vintage can lead to very different results. Fortunately a pristine condition cork that was easy to pop. At this stage it is not my most favorite aged Dauvissat Forest but fascinating to experience and to share with people who truly appreciate it. I think my sweet spot would be 10 to maybe 15 years at most, but the 10 would go to a cooler vintage that is more mineral. For something that is super linear like 2014 I am not sure I would like it a lot unless there is positive side of bottle variation. Also this bottle tastes best right out of the gate, maybe 20 to 30 mins slow ox at most, so you can get that typical light pungency and lanolin texture at the start with just the right amount of bitter aromatic citrus pith, that quickly dissipates over time. Perhaps I am not a super fan of ultra aged Chablis 1er unless it evolves to a profile I like, but definitely educational and a good learning experience to know how this can be just for this producer and climat.

    October 6, 2021 - Rich ripe fruit, tropical tutti frutti potpourri, hay, honeyed, wide mouthfeel, lacks something in the precision sector. Enjoyable and ready to go now, I would not wait.
