January 30, 2023 - ABV: 13.5%. Opened this bottle several days (or perhaps even a week?) ago and poured myself a half-glass while I was cooking. I remember that this bottle tasted a lot better upon opening than the previous bottle that I opened back in October (see tasting notes from 10/8/2022). The remaining bottle was corked and stored in my refrigerator, which I had completely forgotten about. Well, I discovered the bottle in the fridge tonight and poured myself a glass just to see if it held up ... and it's delicious! The nose exhibits black and red fruits mixed with roasted Mediterranean herbs and smoked meats. The acidity kept this wine intact through the days that it was forgotten, but is now lifting the juicy black and red fruits on the mid-palate. There's a solid and lengthy finish, leaving a very pleasant flavor on the palate. I was very surprised at how well this wine held up and I don't plan to open another bottle (if I have another one) until the 15-year mark.

November 28, 2022 - always a nice bottle for daily drinking. intense red fruit with some spice. great with steak or chicken.

October 8, 2022 - ABV: 13.5%. A very Northern Rhone-styled nose with a smokey, meaty, and rocky mineral profile. There's a faint background of red and black fruits, which didn't reveal itself until about a hour after opening the bottle. The acid's a little discombobulated on the palate, and the tannins are still evident, which shortened the finish. There seems to be a lot of potential in this wine, but it's way too young right now to be enjoyed. If you really want to open a bottle, decant it for several hours prior to consuming.
10/9/2022 - Raised the score by two points. The nose evolved overnight and now exhibits Herbes de Provence mixed with red and black fruits. On the mid-palate, the tannins have soften a bit and the acid isn't as piercing, revealing a core of bright fruits (think plums and bramble berries) with a hint of rhubarb pie. The finish is also lengthier than last night, but overall, this wine is still very young. I'd say to wait until this wine is closer to the 15-year mark before you open it. -

April 24, 2021 - Some cherry, plum. Pair well with stake.
