    November 20, 2022 - At first the evervesence was off putting but then some but not all of it blew off and it became more enjoyable. I assume the evervesence is due to the aging in a cement egg vs barrel? This is my first time having Chardonnay from an egg. A technique commonly used with white Bordeaux and Sauvignon Blanc. There is some residual sugar in this wine and the combo of the touch of sweetness plus evervesence has this reminding me almost of a sparkling Inniskilin wine but just not as sweet. Interesting wine for sure.
