    November 17, 2019 - While some time ago the premier crus did not really shine, compared to the village Chablis from this producer, it has now evolved to something special. It is still citrussy (lemongrass) with some acidity, but it has smoothed out and developed additional aromas, even a bit creamy now (but still well balanced by a good acidity). Had it with smoked salmon trout and horseradish-creamchesse. It did cut nicely through the fatty fish, a perfect combination.
