October 15, 2018 - On 10/13/2018, paired with uni pasta and black truffle, this was fantastic. There is a lot of minerality and some of the lemon added to the pasta goes went well with it. A bit more aged could have been perfect for the truffle but so hedonistic pairing I can't complain !
