    April 15, 2019 - Chimay, Pères Trapistes, (Bleue) Grande Réserve, Vieillie en Barriques, Types de bois: Chêne, Cognac, Châtaignier, 3 Fermentations: Cuve, Barrique, Bouteille, Mise en Bouteille: 10-08-2016 (August 2016, 3rd Batch / Edition), 10.5%.
    Ingr.: water (zuiver water uit de putten onder de abdij), barley malt, wheat, sugar, hop & yeast (the same yeast as isolated by Father Theodore in 1948).

    3 fermentations: tank (3 to 5 days at 18 to 32 DegC), barrel (around 6 months), bottle (21 days at room-temperature until the fermentation is completed).

    This third batch is a mixture with several type of barrels.
    Here we have a bit more wood than Cognac, which gives the beer more woody flavours.
    Type of Barrels:
    27% French oak
    40% American oak
    16% Cognac barrels and
    16% chestnut.
    TN:
    16-05-2017 at 10-11 DegC:
    Nice foam. Somewhat lighter body than I expected and hoped for, but it has balance. Fine mousse and nice acids, which are dominating in the sweetness. Very light alcohol taste, but not much for it's 10.5%. Nice lightly roasted and bitter malt taste. I did not taste wood or vanilla from the barrel ageing (it were all used barrels), but you can taste the backbone given to the beer by the barrels.
    At 13-14 DegC:
    The same, but now the sweetness more on the foreground and some wood in the after-taste.
    07-04-2019 (after nearly 2 years (!) and yes, I wanted to keep an open bottle for 1 week or so to see what happened, but I forgot that I had this bottle, since it was in the back of a fridge) at 12 DegC:
    Not so sweet with now some heavy burnt sugars / caramel and somewhat simple.
    Conclusion:
    A nice beer and I doubted between an 89 and 90 score, but for me at € 19 a little bit expensive (I want to taste more and I would have liked more complexity) and yes not for the production costs.
    S=89-90 R-7(19) 4/15/19 M=2016-2025, since I do not think it will improve much with age.
