June 26, 2008 - no fruit or honey as previously detected, but there is a small amount of dried wine on top of the cork with a clear running line on the way out. possible leakage but not entirely convinced. some nutmeg and lemon but that's about it. i hope this is not what it was meant to be.

August 1, 2007 - Paumanok and Dinner with Mikhail: Light lemon color. This contains a little more free run juice than their Festival selection. Suspended lees during fermentation picks up some of the harsher oak flavors, leaving it cleaner on the palate, according to Charles Massoud. Goes through malolactic. Light lemon color, intriguing nose of butterscotch and lemon peel. Good acid spine but smooth on the palate with hints of honey.

August 1, 2007 - Paumanok and early dinner after: this needs time to show itself. very primary - lots of butterscotch, this is malo/oak aged, lots of free run juice goes into this wine, less acidity, fuller wine, rich middle and nice but a touch hot finish (i am very sencitive to this in white wines being a lover of german riesling so most probably would not notice it). in time this will probably develop a lot more complexity then there is now.

April 24, 2007 - Very interesting. I brought this to a dinner meeting on Tuesday. Other people drank some but I did not taste it. I brought a lot of other whites, and there was a lot of this left, so I put in a cork, brought it home, and threw it in the refrigerator. Opened it tonight (Friday). A big surprise. Nice and smooth, no obnoxious oak, pears on the nose and palate, a bit of mineral spice and tropical fruit. Not an over-oaked buttery California style chardonnay, but not as austere as a white Burg. I had a Rochioli and a Kistler chard last week and although they were more complex and had more flavors, the oak was enough to give you splinters. The Paumanok had none. Maybe it was 3 days of air in the refrigerator, but if that was it, then I recommend the treatment very highly.
