July 31, 2020 - Starts out a touch stemmy and even maybe closes down for a bit over dinner, but that’s tough to judge due to the weirdness of drinking outside (COVID wine notes). However, after two hours this settles and is just BEAUTIFUL. My line on Cathiard has always been that it’s the Gonon of Burgundy (it’s always open) and I’ve never had secondary notes on one (because everyone opens them young because they’re so delicious). After two hours this was definitely delicious, but also with great concentration. There’s a touch of oak, but it’s so well integrated. The best stemmy wine I’ve had all year! 😉
