February 3, 2019 - Con uvas vendimiadas al final de la vendimia para obtener la máxima madurez este monovarietal de savagnin viene de la mano de rendimientos moderados (unos 25 hl/ha). Se llevan a cabo vendimias manuales con "tries". Tras la fermentación alcohólica y la FML va a parar a barricas donde desarrollará el velo. Al principio con la barrica llena pero ya no se rellena según pierde líquido. Crianza mínima de 2,5 años. Levaduras indígenas. No embotellan a demanda, hacen un único embotellado. El vino tiene olfativamente cierto aire jerezano pero en boca el carácter es distinto, sobre todo por la acidez pero también por una obvia salinidad. Muy buena presencia. Se embotella en la peculiar botella llamada clavelin (62 cl)
