    September 12, 2020 - Method: 40 minutes prior to tasting; 54 degrees; Grassl Mineralite

    Look: medium gold; several steady streams of fine bubbles; medium amount of fast and medium speed legs

    Nose: creme brûlée, cinnamon, nutmeg, brioche french toast, lemon peel, ripe pear; very expressive nose (hits me before the glass is to my nose)

    Palate: challah, pear, bread crust / toast, hazel nut, toasted almond, almond cream; medium+ finish mineral, chamomile, light smoke; dry; medium body; light+ superfine bubbles make the tongue tingle and fade to light froth; low+ acid

    Overall thoughts: This is a really nice, toasted Champagne. I love the lighter, very fine bubbles that don't overwhelm the palate and let the flavor shine through. The acid is surprisingly low, but it works well for me as I think everything is balanced nicely, even if this isn't an especially energetic Champagne.

    Palate: Challah bread, cream, lemon curd, almond, yellow apple, salinity, medium finish, light/medium body, low + acid, very light & fine bubbles, they are so fine they don't froth in your mouth like some champagne bubbles do.

    Overall: This wine is very elegant. I like the flavors in this wine but I think it could have a punch more acidity and for me what is really lacking are the textures of the bubbles, I would prefer the bubbles to be a little more pronounced, they're a bit flat.

    July 7, 2018 - Bought this 3 years ago. Oak influence obvious but not over the top. Quite oxidative. Ripe. Eveything in balance, but borderline. Bollinger and Selosse hybrid. I thought it was really nice and wish I had and extra bottle to age further and see what happens from here.

    A nutty, oxidative driven nose with bruised apple, ginger and earth. The palate also has that oxidative note, but there is also good richness from the fruit that leaves it with a sense of balance. Finishes with good length and ends cleanly thanks to the acidity. Good interest with this wine, though it was mostly from the style rather than having layers of complexity.
