  May 2, 2023 - 97 was not a great vintage and the wine is now on its glacial decline. Still very enjoyable but the peak drinking window is closing.
  
  Very much tertiary driven, it is a mature cab sav - full of spice, herbs very concentrated plum and dark fruit on the nose. Body is more of the same profile except it lies on a bedrock of black tea, cedar and burnt cigar. Oddly the finish was quite fruit driven.
  
  Drink now to 5+ years.

  April 29, 2023 - Smoked meats with Jason: Perfect cork. Lots of tar and greenness, harsh tannins.Better on second day, some actually guessed Bordeaux.

  April 6, 2023 - Penfolds Cabernet Sauvignon 707
  Decant for 20 mins in small decanter, with great company in HK.
  Profound nose with rich multi layers, riped black fruits, berries, chilie spice, herbs. No gap between transition, the palate is great, still robust, no sign of down streem. Excellent strength and power! No compromise in her length in finishing...lasted more than 60 seconds! Great wine! Cheers!

  February 20, 2023 - Immediately after decanting it seemed rather thin and past its best. It opened up remarkably in the glass (a big Riedel) and developed into a typically rich, full-flavoured 707. Don’t be afraid to decant it at least an hour before drinking—there is plenty left after 25 years. Sadly it was my last bottle out of the case.

  September 29, 2022 - Bouchon impeccable. Vin qui fait à peine ses 25 ans. Avons bu le Grange '97 plus tôt cet été. Son petit frère se débrouille très bien ce soir.
  Beaucoup de fruits (mûrs) encore, dense, tertiaire assez présent (champignons), un peu de menthol.
  Un régal avec la côte courte du Monsieur B.
