    June 13, 2021 - There are two different bottling of the basic Chablis available as the pictures are showing, this note is about the edition "Domain" made from their own grapes. 12.5% vol. Maturing: 10 to 12 months in stainless steel vats to preserve freshness; maturing of 5 to 10% of the harvest in French oak barrels during 5 to 6 months. The edition without "Domain" on the label is matured in stainless stainless steel only.

    PnP. Lemon, pineapple and mineral notes, on the palate crisp and clean, good mouth feel and long finish. Chablis in its purity, nothing is too much, nothing is missing and the bottle was getting empty quickly, drink now or within the next 3 to 6 years. Should have bought more than only a single case.

    June 10, 2021 - Fevre Chablis Blind Tasting (Oceanaire, Mpls, MN): Pale gold color. Drank a glass single blind over an hour. Flighted blind with '17 Fourchaume, '13 Bougros CdB, & '18 Les Lys. Well this just takes off, brine, oyster shell, apple, tropical fruit, really aromtic and pretty. The palate is a little more round with the acid playful but tamed, this feels about right for drinking, saline, tropical and stone fruit, nice power and depth, just lovely, crisp apple. Dang, we were all impressed when this was revealed as the AOC Chablis. Held its ground with some big boys. Great vintage and showing really well; might this get even better?

    June 10, 2021 - A recent btl caused me to speculate that this estate AOC would fair very well alongside Fevre's upper echelon and, tonight it did! Tasted blind tonight along with 11 other mostly Ler & Grand Cru Fevres from mostly '14,17 & 18 vintages. Drank in my shallow round bowl Riedel Montrachet knockoffs. Pale green gold color. Classic sea breeze aromas. Unexpected concentration, intensity and purity for the level. Sips are tasty Chablis lovers mix of mineral dominated citrus, stone fruit & salinity. A very cohesive balanced and elegant AOC. 12.5% Alc Paid $29 locally. 92+ I think most everyone at our dinner was surprised to learn this was the humble AOC Chablis. OTOH, our group has great respect for Fevre so maybe this shouldn't be such a surprise :). Everyone knew the wines to be tasted but flt sequences were mixed up & served blind by our waiter.
