    March 1, 2023 - Full bodied, producer-unique styling, highest quality real cork.

    Never have had a wine so similar to beer, first day funk like a Duchesse de Bourgogne, alongside tar, iodine, cabbage, bright Syrah fruit in the background. Second day was best - scorched bacon and skin, black olive, red mountain fruit poking through campfire and coriander. Third day yeasty dark stout beer tones dominate.

    Highly recommend at this stage: in the afternoon open and decant into another bottle, recork, and then drink it the next day. Not sure it needs cellaring as much as specific management of air to your taste, secondaries are already so dominant.

    April 7, 2021 - Aromatics of fried bacon, braised beef cheeks, molé sauce, campfire, and savory herb. The intensity of the aromatics really are insane.

    notes of blackberry, raspberry, plum, peppercorn, earthy spice, olives and blue florals. Elegant mouthfeel--medium bodied, nice intensity and fine tannins.

    About 3-4 hours in a decanter the initial wild funk aromatics blow off and you get the beautiful spicy black fruit and earth notes that bring you towards northern rhone.

    WOuld love to see this in a few short years. 96+ for me
