May 9, 2022 - Cold packed blackberry liquor Birbo signature family deep extraction, substantial delicious tannins, & herbaceous black plum Jam. Cherry liquor and graphite, a touch of rounding American Oak and barrel spice. Medium full bodied, with more medium Chalky tannins to chew on. Reminds me of an Aussie McLaren Vale , plenty of time to age say 8 + years. Very enjoyable for being from quality varietals, great farming, and patient long extraction.

September 15, 2021 - Opened very hot with pronounced menthol note, strong red fruit, cherry, became much more nuanced and softer on day 2, with chocolate, cherry and wonderful deep finish, great wine, just add air!
