    October 22, 2023 - Gassy and a little weird today... Cali sponti? Methinks yes...

    Aromas of well toasted sourdough, petrichor, curry, licorice, mint, pine forest, beets, strawberry jam, orange candy, dried roses... Tangy and savory on the palate, fruit feels a little cooked and dried, but this is quite lively and fresh, the yeasty and gassy qualities are getting in the way though, this will be better tomorrow. Tannins are fine and acidity is so well integrated, this has the balance to improve for many years. Long on tangy fruit and myriad savory and herbal tones. Let's see what's up tomorrow...

    ...more fruit after 24 hours of air. Aromaa of black cherry, raspberry, strawberry, citrus, plus myriad delicate herbal, soil and floral tones, this is just fabulous on the nose... still tangy and savory on the palate, elegant and quite herbal and dry. Raw and wild, suave and refreshing showing off intensity and delicacy at once, this is multifaceted, and I love it. Maybe not for everyone though, it is a little out there... Meant for food, I think rare lamb with lots of herbs might be best?
