    July 18, 2018 - The sister winery of Lethbridge, Between Five Bells is known for its lighter and less complex, but still amazingly smashable wines. One of the most fascinating things about these wines are the beautiful and innovative labels. The labels feature graphics which are representations of data collected about each wine - the fermentation temperature, the time on skins and the ripeness of the grapes.

    The base of the 2015 B5B White is Pinot Gris: split into two parts and fermented separately. The first part is de-stemmed, gently pressed and fermented in foudre. The second is fermented on skins for 10-12 days. While the wine is naturally fermenting, Chardonnay, Riesling & Gewurztraminer juice are introduced at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy. Kind of a re-imagining of chaptalisation if you will. Even though the wine has an interesting production story behind it, it doesn't keep you interested with its taste. The blasting alcohol (13.8%!) smothers the acidity, which has a nice crunch, but just can't express itself under the burning wave. A shame, since it promises much on the nose, but doesn't deliver in the mouth.
