    May 31, 2021 - Decanted for an hour, then brought to a dinner with staff from a well known Paso Robles Rhone producer (who will remain nameless). Served blind; said staff called this a GSM blend from...Paso Robles. Come on, people! Nothing from Paso could have this much garrigue!

    Black cherries, luxardo cherries, dark plums. Wet stone, chalk and a TON of garrigue/scrub brush flavor. Sage, rosemary, black pepper, smoked wild boar. Beautiful wine. Full bodied, medium tannin. Drink now; but it will also benefit from a few more years.

    April 23, 2021 - Short decant. Nose of kirsch and wet stones. Palate shows a range of bright red fruits flavors with correspondingly bright acidity, with granite a pronounced garrigue / herbs de provence streak. Long, lingering, and leathery tannins on the finish with sour raspberry, kirsch, mint, and charcoal.

    February 14, 2021 - I decanted this bottle at noon. At 4:30 PM I poured it back into the bottle. At 5:30, we had this with our Valentine's day meal of beef Bourguignon and tossed salad.

    At this stage, the acidity was quite prominent, dominating the flavors of black cherry and leather. The wine worked well with our hearty beef dish, but it might have been inappropriate to drink by itself.

    After another hour, when we had finished our meal, the acidity had settled down, and other characters revealed themselves: charming fenugreek bitterness, iron, roasted nuts, and orange peel. At about the 6:30 mark, the tannins lengthened, and a silky mulberry-juice flavor crept in. The wine was quite nice at this point.

    I think this wine isn't quite into its optimum drinking window yet. I'll probably wait about 3 years before opening the next bottle. All-in-all, it was a pleasant wine from my favorite CdP producer, from a vintage that I suspect is underrated.
