February 18, 2024 - PnP. Served at about 18 degrees C. Good deep colour, a vintage characteristic. Rim a little watery. Not very expressive to begin with, as it is rather firm. Pleasantly so, mind you, some may even want to stress the minerality. The nose has furniture polish, wet earth and some spice. A very solid wine with a firm yet not forbidding structure. With time in the glass, the charm comes through. Fruit, smoothness and lovely length manifests itself. Some previous bottles have needed this time to come through, but the last one before this was fresh fruit from the word go.

February 17, 2024 - Dark and rather dense red color. Earthy aromas with dark red berries, and some vanilla and spices. It actually reminded of a Nuits-St-Georges. Quite masculine and rustique on the palate, with a bit coarse tannins. After a couple of hours in the glass, the aromas turned into more soft, developed and delicious Burgundy aromas. The wine seems to need another few years in the cellar. Impressive for a Savigny!

December 6, 2023 - Gave it an hour of decanter time and it continued to improve thereafter. Plenty of ripe cherry elements with just the right touch or sour cherry and black fruit notes as well. Very modest minerality but some earthiness with touch of sweet Oak. Very smooth. I suspect it might improve a bit over the next few years. No rush on this wine.

November 23, 2023 - Thanksgiving 2023 (Los Gatos, California): Ruby center, fading rim. Funk and fennel on the nose along with whole cluster scents. Medium weight. Very solid blue and black fruit, some brambliness, excellent acidity, lots of earth, and moderately grippy tannins. Just enough of a hint of wildness to give it more interest. Excellent now but not yet mature. Another 5 to 8 years?

May 6, 2023 - Deep colour, not completely translucent. 2005 is a particular year. Very aromatic, with deep tones of earth, some spice and crushed lingonberries. Deep fruitiness in the mouth. Fine structure, but the turbo-charged power of the fresh fruit lasts all the way through. Truly an outstanding wine.

(Pavelot Jean-Marc et Hugues Savigny-lès-Beaune Les Dominode) Medium-plus colour. The nose starts as a sumptuous swirl of deep cherry and well-integrated oak, an hour from opening and it’s tighter with edges of tobacco and cocoa. Like the nose, this starts hyper-concentrated yet plush, but like the nose it’s a transitory period before it tightens to show its inner self; intensity, excellent acidity and furry tannin before a good finish. Sumptuous and hedonistic for 25 minutes, underneath there’s the power and structure for 25 years of development. Given the tightening I would suggest drinking only over the next 6 months before sleeping for at least 10-plus - but buy all you can find, and that’s despite a 30% price increase over the last 4 vintages.
