    November 28, 2022 - PnP and tasted over a couple hours with some left for tomorrow. Dense but brilliant ruby crimson color. The nose has a rather effusive and complex bouquet including ripe red and black fruit, game meat, some oak induced notes, spice and menthol. Palate is quite smooth and luscious with bright acidity and a very minerally backbone. Moderate tannin. There is nice length and complexity including some various jammy fruit like cassis, boysenberry and pomegranate as well as peppery and meaty elements. Lots of mixed spices and floral elements as well as some herbal and anise notes on the finish. Quite tasty and mouthwatering. Seems like a mid-term ager but very attractive now. Great with elk medallions.

    p.s.Next day this was still enjoyable though a little less dense and slightly more tart.
