February 16, 2024 - Some noticeable development since I had this a couple of years ago. More obvious honey notes and sweetness that made the angularity less pronounced. A serious and vinous cider.

May 24, 2023 - Just a touch of sweetness, enough to work with the fine bubbles to create an enveloping feel on its own. Worked great with a homemade Thai shrimp red curry.

A very vinous, almost a wine just made of fruit and in that style down to the vintage bottlings. Can be a touch sweet at times but very pretty when well paired with food.

August 28, 2022 - Still fresh at 3 years. Unmistakable pear aromas; fruity on the palate but dry and crisp; balanced. I love Bordelet's ciders.

April 16, 2022 - Enjoyed this more than the last Bordelet I tried. Unmistakably pear nose, very lean and serious but not at the expense of fruit.

February 20, 2022 - Very tart and angular in very good terms, this is lean and attention grabbing.

February 19, 2022 - February foie (Chicago, IL): I'm not sure I'm able to distinguish the vintage differences for this cider, but I can readily say that this is probably the Jungian archetype of pear flavour. A little more racy and acid-driven than I remember in the past, but an incredibly pleasure to drink as always.

November 14, 2021 - PNP into Spiegelau red wine glass (“Leaf” day): medium lemon to the eyes, brilliant colors.

Fully ripe pear notes in fine details, florals and honey preserved golden apples.

Superbly integrated with perfectly judged acidity and sweetness indeed.

94 points easy for me. Super enjoyable now and will age well for a few years too!
