November 12, 2023 - No detailed notes. Cork was in perfect condition with barely any penetration showing and there was very heavy sediment in the bottle. Deep garnet-red color. Moderate nose of classic Cabernet aromas but little complexity or tertiary notes. The palate was similar and perhaps a bit lean but the balance was nice. All it in all it was a pleasant drink with dinner but nothing exciting. Perhaps it's past its prime. Purchased form the winery on release and stored in my cellar since.

September 26, 2020 - Lovely and subtle. This doesn't explode with character but certainly has come to a nice, even place of maturity. There is a touch of sort of a volatile nature that can be indicative of the vintage. Like the fruit got just passed a place where it could really build with time. But this has that subtle graphite inflected mature Cab expression that would make you want to blind it in a St Estephe tasting. The Beringer Chabot is certainly a very underrated wine from California.

Dark red, saturated color; on the nose cedar, leather dust, some sweaty socks: On the whole rather attractive and not in your face.
On the palate the wine is disappointing: it offers no peaks nor valleys nor nooks and crannies but stays on a rather smooth level . There is some tannic backbone which is not overly prominent and gives it some heft.
The nose is best; overall the wine has probably progressed past its prime..
Shame on me for keeping it too long! I am getting a bit disillusioned with the staying power of, supposedly, high quality Napa Cabs!

August 3, 2018 - Calistoga Inn Restaurant & Brewery - Aubert, Shafer, Bevan, Sea Smoke, Togni, and more... (Calistoga): Two Beringer Chabots served side-by-side: 1991 & 1994. Not too much in the flavor department from either one beyond some vanilla cherry water/kirsch and wood notes. Flat and bland on the attack. Round and faded on the finish. Fairly hollow mid-palate.
