  November 28, 2022 - Deiss website uses an ‘interesting’ array of words to describe this but I would go for smoked hay and mineral aromas. ‘Thick’ seems to be a good term for the mouth feel. It’s chewy and savoury without being syrupy or even vaguely sweet, dried raisin and apricot fruit but again the mineral notes with hints of spices. Moderately long finish. A complex wine, a good complement to mushrooms I think

  December 25, 2021 - Had to see where it "started". Deiss' web site gives clear indications on where wines are in maturity -- says this is beginning to open. Agree. Will wait another year at least for the next one.
  
  Already a special wine despite being quite tight. Followed Deiss serving suggestion of grilled salmon and mushrooms and added sauteed Brussels sprouts. Excellent.
  
  First experience with a complantation wine - in this case Riesling, Sylvaner and Pinot Blanc planted together in the same commune terroir of Ribeauville. The Deiss web site explains their reasons for complantation. One can taste the difference it makes in this still young wine. Have long admired Alsatian Riesling, Pinot Gris and Auxerrois as separate varitals but this complantation blend is different from and at least as good.
