    May 13, 2023 - Popped and poured. This bottle was disgorged on 11-11-2020 and is a light gold wine with a medium level of bubbles. On the nose, I get apple, pear, and some slight sugar cookie. In the mouth, this is crisp, with more apple aspects and tart Chardonnay flavors (ones that are reminiscent of a nice unoaked Chablis). The finish is refreshing and expands out in the mouth – it is somewhat like a dry cider. Overall, this is a direct and creamy sparkling wine. This version didn’t remind me much of any Champagne; it is definitely its own animal. I think one could hold this for 5-10+ more years without issue (not sure that will make it better, but maybe?). 91 points.

    April 16, 2023 - Just such a great wine. Lemon, spice, toast, hints of coffee, brioche. Plenty of acidity and tiny bubbles. Blinded this easily passes for one of the great Champagnes. Disgorged Nov 2020.

    November 24, 2022 - In the glass, medium-fine bubbles, with a rich medium-yellow color. On the nose, fresh-squeezed lemon juice. On the palate, crisp, bracing citrus, with secondary notes of bread and oyster juice - still full bodied as with other Ultramarine bottlings, but dialed back on the fruit and dialed up on the citrus and minerality.
