March 20, 2024 - I compared this 2016 BdB to the 2017 Haliotide Late Disgorged BdB to get a feel for styles. Followed over two days with no change.

One of the better Ultramarine wines I’ve had, and definitely pre-funk. I feel like the last few vintages have shown a lot of bottle variation and sometimes a green/herbal profile, mostly in the BdN and BdB (never in the rosé, that’s my favorite wine in the portfolio).

The older vintages always had a distinct cream-soda aromatic to them that I loved, and this has it in spades alongside truffle Honeycomb and spiced apple. Oxidative flair but not an overly oxidative sparkler. Great depth and richness here…almonds, lemon cream, caramel-green apple. Wears the low dosage so well. Broad on the palate (in a good way). I’d be fine drinking this without food. Tasty.

September 9, 2023 - Minnesota Valley Wine Group Syrah Tasting (Amy & Scott's - Eagan, MN): Similar to last bottle (pear, apple and brioche), although this showed a little more minerality (in the form of slate), thus the extra point. This may even gain an additional point or two with more bottle age. Will be curious how this ages! Still adore the creamy mouthfeel! 93+ to 94.

September 9, 2023 - Minnesota Valley Fine Wine Tasting Group Syrah Tasting (Eagan, MN): Excellent Sparkling wine with apple, spice, orange peel, minerals and chalk. A rich sparkler that would give many Champagnes a run for the money. 92+

June 15, 2023 - This bottle was consistent for this producer. There is some kind of musky animalistic or possibly brett-based funk to it. Everything else is in the background, white fruit, good acidity.

June 14, 2023 - Drank over 2 days and this became many different wines and experiences. Day 1 on opening this had a nose of toast and citrus that could have been confused for champagne, on the palate Lemon and marmalade and some orchard fruit, very effervescent mousse. After a few hours this lost some of the initial sweetness and the lemon and acid were most prominent—I enjoyed it but I can see how this stage would be very polarizing.
Day 2 still some bubbles but it definitely has a more vinous quality. Reminds me of a good Oregon Chardonnay, still lemon and acid but more balance and some matchstick type reduction notes (which must not be reduction to appear on day 2?)
    Very strange, very fun bottle
