    January 11, 2022 - Similar notes to last tme. Mousse that is not as persistent as it could be but refreshing effervescence. Palate ranging lemon, citrus, toasted brioche.

    December 18, 2021 - Poured into flute and wider bodied glass shortly before dinner (tuna sashimi followed by soy ginger bream). I’m not really a bubbles expert, but this was very good. Nose of orchard fruit. Palate of lemon, brioche, line custard, and hints of apple. After an hour there was less effervescence and fruit with more game meat and toasted notes. Very fine mousse. On the more acidic/sharper end but holds it together. Again, I’m no expert on bubbles but this wouldn’t be out of place in a line up of grower champagne - though the high acidity reminds me more of high end English sparkling wine (Hambledon Hall or Breaky Bottom) than France. 93-94 very well done.

    October 27, 2021 - DG 11/18/20...WOW this one starts out like a crisp hard apple cider, fresh baked beer bread, and lemon tarts! More vinous flesh than the 15...really sour tartness, yet creams up wonderfully with a pillow soft vanilla ginger marsala cream mousse...great saline crushed rock minerality...exotics of almond liqueur, lychee florals, red apple skin, Big Cherry Candy Bar, mulled wine spice...just SO refreshingly rich, world class, unmistakably UM, and a helluva lot of FUN to drink! UM reminds me more and more of Cedric Bouchard...(gasp emoji)!

    September 27, 2021 - Absolutely delicious, loaded with smells and flavors of lemon zest, fresh baked bread, and rich buttery lemon curd.
