The wine shows medium to high intensity, filled with ripe fresh citrus, stone fruit but also some red cherries. Nice thin yeast layer, almond, quince, toast, more fruit/vibrant than normal/typical blend champagnes.
In the palate, the wine shows lean to medium body, no bread or yeast notes, medium acidity, nice carbonation with a touch minerality, strawberry notes, framboise notes, raspberries and cherries, medium finish.
Very different in style but also very interesting. Would be fun to find a pairing for it. With time you also get some tropical and peach notes. -

February 11, 2022 - Crisp and acidic, with notes of crunchy ripe red apple, lemon and vanilla. Slightly toasty with lots of depth and minerality. Very fresh. The acidity is fabulous. Reminds me of apple cider. Sad this is my last bottle.
