    September 11, 2022 - Hawaii Vacation; 8/29/2022-9/19/2022 (Lahaina, Maui): 100% Chardonnay, from Avize-Oger. Lemon-yellow; aromatic, tart lemon-lime with a bit of lemon pith; medium bodied, medium-plus acidity, nice vibrant mousse, some stone fruits, but overall lemon-dominant, clean, limited brioche and breadiness, medium alcohol; medium to medium-minus length. Still showing perhaps a touch less length than Savart-produced champagnes (even entry level), but a well made champagne and enjoyable to drink. A tad better than my last bottle. 89

    March 31, 2022 - I like this much more than the Éphémère 005. I’m a sucker for undosed champagne This is blanc de Blanc as well. This just has a delicacy and cohesiveness the 005 did not. Fine mousse as always from Savart. It is not especially flavorful in fruit. Mostly leesy, giving off lemon pith and some dryness on the finish. But it’s refreshing. 89-90.

The acid settles in a little 30 minutes after pop, and a bit of rich fruit continues to strengthen. Overall enjoyable, and certainly worth the price.

    December 17, 2021 - Vajra Horizontal (Millbrae, CA): 100% Chardonnay, from Avize-Oger. Light golden-yellow color; aromatic, lemon curd, brioche, a bit coiled; palate is medium bodied, medium-plus acidity, lemon-lime, fairly fresh on the palate compared to the more yeasty nose, low balanced alcohol (12.5%); finish is medium-minus length. The balance is good, nice blend of freshness and richness, and it's fairly good value at $50 comparable to entry level cuvees from other producers. The length and depth are somewhat limited compared to Savart's own line, and that holds this back from being even better. Drink up in the next few years. 88

Oh how much I wish I could eat this nose. On the palate you are greeted by the most lively, fine mousse. Beneath is an acidic and energetic wine of great purity. The flavor profile is very classic: green apple, tangy citrus fruits and minerality for days. Unfortunately where things get less hunky-dory is the texture that starts off fine but gets thinner and thinner towards the finish. The wine is very drinkable and refreshing but boy do I feel it would benefit from say 3-4 g/l dosage. It’s a shame - it has everything going for it except the mouthfeel.
