December 31, 2023 - I associate this producer with a lean, chalky, citrus-driven style, which this bottle was not.
At first this was one-dimensional, showing just baked apple and no lees influence.
~2 hours later it really opened, showing baked apple, caramel, baking spices, some brioche, and a touch of hazelnut. Slightly sweet finish.
Acid & body are perfectly balanced.
Give this some time to breathe - it really benefits and the effervescence isn't impacted much. -

November 4, 2023 - 25th Annual Lyon 10 Year Retrospective (Lyon Down Inn): Ooooh! This is "Special"! White citrus, yellow apple, marzipan and brioche float on "Tiny Bubbles" (in Hawaii / Don Ho). Kills the Cali bubbles in this comparo.

November 4, 2023 - Candied lemon peel, marzipan, and almond milk. Smooth bead, expertly balanced acidity and dosage. Really wonderful throughout, closes long on grapefruit and minerals.

Sone air and it sharpens up, gives a dry finish and hint of bitter extract - really good, very enjoyable
At its release price it’s very good indeed.
