    June 14, 2023 - Pale yellow - honeylike. Constrained nose, very smooth on the palate, muted, long and persistent salty acidity. Perfectly balanced.

    July 9, 2022 - Excellent rendition of the Chablis VV. Dark yellow in glass, intense aged citrus, lemon, mineral, flint/smoke, with layers of subtle herb woven in across nose and palate. Opened and other aged fruit--perhaps baked apple, pear--show up with air and time as acidity seemed to ease a bit. Resolved to be beautifully clean and rich, great length and balance. Seems in top form now. Prior note mentioned affinity to Jura chards and I think that is apt, though Chablis still speaks.

    July 7, 2022 - Really wonderful, rich and complex Chablis. Buttery, nutty aromas with ripe apples but still a lot of Chablis type minerals. Smells of oyster shells and flints. Lime-like acidity with a grapefruit’s bitterness in the ending.

A really nice balance of dry oxidation, acidity, modest apple-orange fruit, brown butter, and Chablis seashell minerality. Paired well with a buttery corn pasta with garlic and turmeric and some of the wine itself, from recent NY Times recipe. This seems just about perfect now, don’t see any reason to age further unless you just really love oxidation.

    March 19, 2022 - Wow. This was almost undrinkable. Uncharacteristic for Chablis. Unless they are known for some oxidative variation that tastes like wet towels, this was awful.

    December 17, 2021 - Tasted after PnP: Oxidative, curious, and somehow reminiscent of Jura wines. After a few minutes it slowly gave way to Chablis terroir, but the acidity never really came through.

    On day two it was still oxidative and lazy, and tasted like a basic Chardonnay.

    I hope this was just a little premoxed, and that my other bottle will be better.

    February 6, 2021 - Nose has bee pollen, yellow apple, pear, white flower (delicate), maybe a touch of cantaloupe. Strong acidity and kind of tart at first. Medium in body, creamy mouth feel. Nose carries through to the palate, more pear, no flower. I feel this needs more time to develop, or not.

    October 18, 2020 - another stellar bottle. rich yet precise. orchard fruit and preserved citrus drenched in minerals with a touch of nutty goodness. mod+ acid to wash it all down.
