    December 5, 2019 - Delicious! Drinking very well now, but still some staying power... could go more years for certain. Powerful nose from the start, dark and intense color, but softened just enough on the palate to make this a great Syrah. Dark berry and spice, slight vanilla and spice on the nose. Excellent bottle and great price!

    January 4, 2018 - Wow! Smoking here. This is a serious wine that's come of age. The nose augurs the profile well. Big black and purple fruit that's had some hang time. Big tar with some underbrush and secondary nuances that start early on the palate but build and linger for a minute into the finish like an 80% cocoa chocolate bar would. Just drinking beautifully here. If you've held this bottle. Now!

    August 11, 2017 - night one last bottle in the cellar. Nose still has the barnyard thing happening with aroma of green olive lard. Wow never quite heard that description before but thats what I am experiencing. Bright red almost sour cherry on the entry but not overpowering. This wine is definitely on to secondary layers and nuance. 40 minutes in the cherry is giving way to some darker fruit flavors, still cherry but blackberry and blue berry showing up as well. Tannins jumping out and making a statement right now.
    day two, barnyard nose has dissipated replaced by some asphalt and smoked meat/lard notes with a hint of 5 spice , this wine is really different than yesterday. Tannins still right out front and the bright dark cherry/underripe black berry tones on the palate. Overall a nice wine but I am looking forward to my other Pax wines still in the cellar. Each of these is a surprise journey. Will finish the rest on day three and maybe even day four
