Smell: Baking bread, apple, caramel, and green pea.
Taste: Caramel, apple, candied apple, and cinnamon.
Overall: Still a very interesting and well made Champagne. It's starting to show some more aged notes and flavors. Still has more life in it than I thought the last time I had it. -

June 20, 2009 - Interestig bottle exhibiting lots of power. This is big and rich and right now still showing very young. There is a ton of hard lemon candy up front but this goes through a fascinating change in the glass. with every pour it starts out loaded with lemon citrus than the yeasty notes arrive and you are left with an excellent balance of flavors which remind me of a Bolli Grand Anne but by the end of the glass it gets to be massive more towards the Sir winnie spectrum. The finish is long rich & powerful so I don't expect this to be anywhere near full maturity, yet the reaction to air where the changes are so relatively rapid are fascinating.

April 10, 2009 - Starting a "new" tasting group (slave2thevine's house): This is always a pleseant wine...but it's not getting any better in my oppinion. There is still a nice minerallity to this, and the mousse is softning up a little since the last time I had it last. There was a very faint hint of bret on the nose...and what once reminded me of granny-smith apples now reminds me of a golden delicious apple.

March 8, 2008 - I really have enjoied this wine as I've tasted it over the past two years. I brought my last bottle to Country in NYC for dinner. Shared it with Nico the Somm there...and had an amazing meal with a very dear friend. All in all this was a lovely bottle of Champagne, and it's a shame it will no longer be made...there was a bit of Bret in the bottle...if you have it you may want to drink it up now.

August 18, 2007 - Perfect in evey way. Lots of fine bubbles. Very subtle yeast. Beautifully dry. Good, soft, receeding fruit (pear and touch of peach). Lovely acidity. Astonishing. We drank it with a huge plate of freshly shucked Pemaquid oysters and were transported! I could live on Pout-Justine champagnes. 12% alc (D 7, F 5.5, WW, Steve B)
