    May 4, 2022 - Aggressive mousse on day 1, flavor dominated by a bitter almost chemical taste (as noted in another review). Mellowed out on subsequent days, finer mousse and more apple, orchard fruit flavors, a hint of bread on day 3.

    January 14, 2022 - Very nice bone-dry Riesling. Bubbles are a bit aggressive, but fade out fast. Acid structure is classic Riesling— very mid palate and really pins down everything else. But, wow, there is a ton of slate and minerals in this wine, particularly in the finish, which only accentuates the dryness. A great change from champagne and way more interesting than most other non-champagne sparklers. I’ll buy again at the next opportunity. Pair with Asian food, maybe dishes in the fatty side— although it paired well with smoky fish. Two hours after opening, it’s flat in Zalto Universals and seems less dry. But even flat and slightly sweeter, it’s still a fine slatey Riesling on its own.
