    October 3, 2022 - PnP with grilled flank steak and roasted vegetables. Very dark in the glass. Nose initially muted, opened up over an hour or so - raspberry and strawberry, faint peppery note like paprika or pimento, maybe a whisper of cocoa powder. Palate is dry and tart with fine velvety tannins, has the same fruit and pepper as the nose, but the overall impression is very dry. Also very smooth and refined - I kind of missed the rough earthiness you get in some cab francs, but this is very good. It's back in the cellar now, will see what it is like tomorrow.
