August 15, 2023 - Yeasty, minerally bouquet. Crisp, yeasty white fruit flavor. Mature but very clean finish. Good complexity.

In der Nase satt gelbfruchtig mit vollreifem Apfel und auch etwas Pfirsich. Dazu recht floral (kann ich aber irgendwie nicht zuordnen) und auch etwas minzig-frisch-kräutrig. Schöne, eher helle Toastnote und für mich auch ganz klar etwas oxidative und vom Holzausbau der Grundweine geprägt. Immer mal wieder blitzt auch eine kalkig-kreidige Note bereits in der Nase auf.
Am Gaumen sehr weinig, aber auf die gute Art mit schöner Säurestruktur und Zug. Trinkt sich super von fast kühlschrankkalt bis fast zimmerwarm. Ist dabei immer spannend, mit Zug und sehr angenehmem Schaum ausgestattet. Hier dann mit deutlicherem Kalk-Kreide-Einschlag, das gibt eine sehr gute Textur und bleibt trotzdem jederzeit elegant.
Im Abgang gibt es tatsächlich noch etwas Salz und mit sehr viel Extrakt bleibt das auch eine ganze Weile.
