October 25, 2020 - The color is apple cider honey with glints of bronze with slow legs. It smells like honey, clementine peel, and notes of vanilla. It has a thick full round texture yet a brightness and a background of acidity. The wine has long finish. Predominately wildflower honey, with layers of peach, honeysuckle, orange blossom, lemon, and notes of vanilla, sage, white raisin and verbena. It was dessert in itself and did not need food. We tried it with a vanilla icecream and fresh blackberries one night and vanilla cream cookies another and it did not displease. We suspect a contrast of seared foie gras or other rich liver pate would be fabulous.

April 14, 2020 - Darker color because of its age. Drinking in a real sweet spot, candied apricot, crushed ice, honey. Delicious and a stand out Inniskillin.

November 23, 2019 - Deep, dark amber color. The nose was really awesome with poached pears, dried candy, butterscotch, baked caramel and pecans. The palate had all sorts of things going on with peanut brittle, candied dried caramel and butterscotch, toast and burnt brown sugar. Finish was subtly clothed in antique burnishments like aged apricots, pears, burnt sugar, peanut brittle, dried roasted Christmas nuts, butterscotch and caramel. This wine is definitely-ast it’s prime but had a lot of really cool secondary and tertiary characteristics. I bottle it under Private preserve and will try some next weekend and see what changes and add to my notes then. Drink up if you haven’t already.

November 10, 2019 - Light brown color with good acidity to offset the sweetness of the wine. Solid structure with well contained alcohol.
