    December 11, 2022 - Light brown in colour with an opulent nose showing dried apricot, walnut and honey. Deep, lusciously sweet and unctuous with perfectly balancing acidity. Very nicely evolved.

    March 14, 2021 - Fairly dark amber. Noticeable oxidation - perhaps a storage issue? (I was not the original owner). Nevertheless, candied apricot and orange peel on the nose with some wildflowers in the background. Tropical fruit, peaches and honey on the palate. Nice honeysuckle and sweet citrus on the finish with some waning acidity. Recommend drink up!

    October 25, 2020 - The color is apple cider honey with glints of bronze with slow legs. It smells like honey, clementine peel, and notes of vanilla. It has a thick full round texture yet a brightness and a background of acidity. The wine has long finish. Predominately wildflower honey, with layers of peach, honeysuckle, orange blossom, lemon, and notes of vanilla, sage, white raisin and verbena. It was dessert in itself and did not need food. We tried it with a vanilla icecream and fresh blackberries one night and vanilla cream cookies another and it did not displease. We suspect a contrast of seared foie gras or other rich liver pate would be fabulous.

    April 14, 2020 - Darker color because of its age. Drinking in a real sweet spot, candied apricot, crushed ice, honey. Delicious and a stand out Inniskillin.

    November 23, 2019 - Deep, dark amber color. The nose was really awesome with poached pears, dried candy, butterscotch, baked caramel and pecans. The palate had all sorts of things going on with peanut brittle, candied dried caramel and butterscotch, toast and burnt brown sugar. Finish was subtly clothed in antique burnishments like aged apricots, pears, burnt sugar, peanut brittle, dried roasted Christmas nuts, butterscotch and caramel. This wine is definitely-ast it’s prime but had a lot of really cool secondary and tertiary characteristics. I bottle it under Private preserve and will try some next weekend and see what changes and add to my notes then. Drink up if you haven’t already.

    November 5, 2019 - Brown color, with glycerine an cotton candy and caramel bouquet. Well structured with notable acidity and well integrated alcohol. Stood up to a very complex stew with spices and herbs, and fish containing tamarind and turmeric. Long length and pleasant finish.

    April 21, 2019 - Now amber in color. Smooth as silk and slightly nutty on the nose and palate. Only now slightly sweet with honey, sherry and pear flavors in a complex symphony of underlying and more subtle flavors.
