    December 17, 2023 - On day one, the nose strikes me as more Bedrock than cabernet sauvignon. A little tight, but dark fruit, cassis, mint on the nose. Heavy/, coarse tannins, with more cassis and mint on the finish. This wine was nowhere near ready for a pop and pour.

    On day two, the nose is richer and more open: cassis, raspberry thyme, oregano, rosehip/bissap. Still tannic as hell--the plan was to drink this with cassoulet, which would have been a perfect pairing, but cassoulet was delayed. Looking back, the pairing would have helped a ton.

    On day three, the nose is much more settled: cassis, rosehip, oregano, thyme, a hint of cocoa, some graphite. At this point, the nose suggests a classic, well-made cabernet. Tannins are very much present, but don't impose as much as previous days. Medium plus acid, and more of the background notes pour over the cassis, the same graphite, cocoa, and herbs. I see the potential now, and it was a lovely pairing with a homemade cassoulet.

This is not at all like that. Between the cassis fruit and light touch of pyrazine it’s obviously Cabernet Sauvignon, and the back end structure reinforces the varietal character. It’s not the most complex Cab, but for under $30 who can complain. Drink now if you like some obvious structure. Hold for a few more years if not.
